A week of 20 minute meals

Can’t decide what to have for dinner this week? These toddler-friendly 20 minute meals are a great way to freshen up your dinner rotation, with simple, easy and healthy dishes your whole family will love.

With curries, burgers and pies, there’s so much variety with recipes from across the world.

Butter chicken

This creamy, speedy butter chicken is the perfect mid-week meal to impress your family. I’ve opted to use chicken thigh, so the meat is tender and juicy despite skipping the marinating time.

In the time it takes your rice to cook, you’ll have dinner on the table. This recipe also freezes really well, and can feed a crowd (the recipe below serves 4 adults, but you can easily double).

Creamy, rich and packed full of flavour, this mild chicken curry is just as good as your local takeout. I serve mine with garlic butter rice, a little coriander, and of course, buttery naan bread. I just buy my naan bread from my local supermarket and heat it in the microwave (after running under the tap for a couple of seconds). You can find simple naan recipe online though, if you want to put in the extra effort.

Satay chicken

This super speedy satay chicken is really easy to make!

The sauce is creamy, aromatic and will be loved by your children (and you!). My toddler absolutely loves this dish, and affectionately calls it ‘peanut butter chicken’.

With a simple yet delish sauce, and a little coconnut cream, this dish comes together really quickly and is the perfect family dish.

It’s even suitable for babies 6 months +. Just cut your chicken into strips for baby to hold. You can serve with plain rice and cucumber, or rice with your satay sauce on top.

Barramundi burger

These incredible fish burgers have juicy, flakey barramundi with a crunchy golden brown herb crust. Paired with creamy avocado, crisp cucumber and your favourite mayonnaise, they’re a great way to upscale your mid-week dinner. I serve mine on a fresh, soft brioche bun, which pairs brilliantly with the crunch of the fresh barramundi.

This meal can be made toddler friendly by decomstructing the buger (cutting the buger, chicken, cucumber and avocado into strips). Peel your cucumber before cutting into strips (for babies).

Beef schnitzel

These toddler friendly, 20 minute beef schnitzels are tender, crisp and so delicious with a fresh squeeze of lemon. Paired with your favourite veggies or salad, or even in a sandwhich, they’re the perfect mid-week dinner. They’re also easy to crumb ahead of time, making them a great entertaining meal or meal to feed a crowd.

They take 4-5 minutes to fry, until they’re perfectly golden brown. Your whole family is sure to love this meal!

Cheats pot pie

This cheats pop pie is everything you want it to be – warm, creamy, comforting, hearty and aromatic.

By making your filling and topping with perfectly puffed pastry, this classic dish can be made in 20 minutes.

It makes for the perfect week night dinner in a pinch, and is also budget friendly with only a few key ingredients.

The trick to reducing your cooking time is cutting your pumpkin and chicken into smaller cubes (about 1.5cm squares). I used fresh thyme in this recipe for a delicious, aromatic flavour you just can’t beat!
