ABC muffins

These muffins are soft and fluffy but still lovely and moist. They’re perfect served warm with a little butter and make for a great breakfast or snack on the go.

This is a simple, clean recipe with only a few ingredients and no refined sugar. The muffins are sweetened with apple and maple syrup.

WHAT YOU’LL NEED

Banana: For added sweetness. Also a great source of vitamin C, potassium and magnesium.
Carrot and apples: Also high in fibre and vitamin C.
Maple syrup: For added sweetness.
Butter: For moisture and flavour. We like to serve our muffins warm, with a little extra butter spread on top.
Cinnamon: Adds a warm, spiced flavour.
Plain flour: For structure, texture and binding.
Baking powder: To help the muffins rise.

INGREDIENT SUBSTITUTIONS

Egg: Add 1/2 cup applesauce/apple puree in place of egg.
Butter: Add 1/4 extra virgin olive oil in place of butter.

STEP BY STEP

  1. Add all wet ingredients in a bowl (grated apple and carrot, mashed banana, butter, maple syrup and eggs). Stir.
  2. Add dry igredients (plain flour, baking powder, cinnamon).
  3. Mix together.
  4. Grease your muffin tray, add batter, bake for 15 minutes at 180C/350F

You can store leftover muffins in an airtight container, or freeze them for up to 3 months.

  1. Preheat oven

    Preheat oven to 180C/350F

  2. Prepare wet ingredients

    Add all of your wet ingredients to a large bowl, including apple, banana, carrot, maple syrup, butter and eggs. Stir to combine.

  3. Add dry ingredients

    Add your flour, baking powder and cinnamon. Stir to combine.

  4. Prepare muffin tin

    Grease your muffin tin. I used a mini silicone mould. Place batter in mould.

  5. Bake

    Bake for 15-20 minutes. Allow to cool slightly. Serve warm (we like ours with a little butter).
