Bacon, cheese and broccoli scrolls

I’m back with another freezer-friendly lunchbox option, my delicious bacon, cheese and broccoli scrolls.

The dough is soft and pillowy, with the ultimate cheese pull thanks to lots of mozzarella. The rolls are also spread with cream cheese, giving them a yummy creamy finish.

Bacon, cheese and broccoli scrolls

These cheesy bacon and broccoli scrolls are the perfect lunch box addition, and they're freezer friendly too! The dough is soft and pillowy, and the rolls are nice and creamy with a cream cheese base. I recommend using lots of freshly grated mozzarella for that ultimate cheese pull!

Making the dough

  1. Activate your yeast

    Stir together warm water, yeast and honey. Once combined, sit for 5-10 minutes. It should be a little frothy. You can use maple syrup or sugar instead of honey for babies under one.

  2. Make your dough

    Add your flour to a bowl. Make a well, then add your water/yeast mixture. Stir with a wooden spoon to combine.

  3. Knead your dough

    Roll your dough out on a lightly floured surface and knead for 5 minutes.

  4. Rest your dough

    Brush a bowl with olive oil, add your dough, then slick the top with olive oil (splash some olive oil on top, and smooth over the surface). Rest for 60 minutes with a damp tea towel over it - it should double in size.

  5. Preheat your oven

    Preheat your oven to 200C fan-forced

  6. Knead your dough again

    Knead your dough again for 1-2 minutes.

  7. Preheat oven

    Once dough is ready, preheat your oven to 200C fan forced.

Make your scrolls

  1. Cook bacon and broccoli

    Cut your broccoli into florrets, and then into small pieces (1/2cm - 1cm sized pieces). Cut bacon into small pieces (about the same size). Pan fry bacon and broccoli in a little olive oil until the bacon is only just starting to brown, then scoop into a bowl.

  2. Roll and cut your scrolls

    Tightly roll your scrolls and cut into section. Place on a lined baking tray and top with grated cheese.

  3. Divide and roll out dough

    Slick your bench with a little olive oil, then divide dough and roll out into rectanges.

  4. Top your dough

    Spread cream cheese, mozzarella, bacon and broccoli over your dough. Save some cheese for the top of your scrolls.

  5. Bake

    Bake at 200C for 20 minutes, or until tops are starting to turn golden brown.
