Baked berry pancakes

This is such an easy recipe that’s great for time poor parents – just make your pancake mixture, top with berries and pop it in the oven! No standing over the stove, and you can even prep it ahead of time and keep in the fridge for the week.

I top mine with berries, but you can even use any fruit – banana also works well, and so do chocolate chips for a fun breakfast or snack treat.

This baked berry pancake recipe is so easy to make, with plenty of healthy ingredients and no refined sugar. It's as simple as blending a few ingredients together, stirring in flour, topping with berries and baking. No standing over the stove! You can also cook this ahead of time, and serve it up throughout the week (hot or cold). It's a great baby-led weaning starter food or toddler snack.

  1. Grease baking dish

    Use soft butter to grease your baking dish.

  2. Prepare blender ingredients

    Place all blender ingredients in a blender and blend until there are no lumps.

  3. Mix wet and dry ingredients

    Add blender ingredients to your baking dish and add dry ingredients (flour and baking powder). And stir to combine.

  4. Top with berries and bake

    Top with your toppings (I used strawberries, blueberries and raspberries) and bake at 180C for 40-45 minutes, until a toothpick comes out clean. If you have a large dish, resulting in a relatively flat pancake, check it at 30 minutes. You may also need to top with aluminium foil around the halfway mark if beginning to brown.
