Barramundi burger (20 minute meal!)

These incredible fish burgers have juicy, flakey barramundi with a crunchy golden brown herb crust. Paired with creamy avocado, crisp cucumber and your favourite mayonnaise, they’re a great way to upscale your mid-week dinner. I serve mine on a fresh, soft brioche bun, which pairs brilliantly with the crunch of the fresh barramundi.

This meal is toddler and baby-friendly too. I like to serve Ben’s burger deconstructed as shown in this video (because of his little mouth!), with strips or bites of crumbed fish, strips of burger bun, and avocado, cheese and cucumber on the side.

I serve mine on a fresh, soft brioche bun, which pairs brilliantly with the crunch of the fresh barramundi. This meal can be made toddler friendly by decomstructing the buger (cutting the buger, chicken, cucumber and avocado into strips). Peel your cucumber before cutting into strips (for babies).

  1. Prepare your fillings

    Slice your avocado, peel your cucumber into strips, wash an break off four lettuce leaves.

  2. Prepare your crumbing station

    Add your flour to one bowl, whisk your eggs in a second bowl, and add panko breadcrumbs + mixed herbs + garlic powder to another (and stir to combine).

  3. Crumb your barramundi

    Pat your barramundi dry, coat in flour (shake off excess), coat in egg, then coat in breadcrumb mixture. Press your fillets into the breadcrumbs to ensure an even crumb. Shake excess dry.

  4. Fry your fish

    Add a generous amount of olive oil to a pan and heat over medium heat. After a few minutes, add your fillets in and cook until deeply golden brown on both sides. This should take about 4 minutes on each side, depending on the heat of your pan. You can cut into a fillet to check if it is done - your barramundi should be white and flakey.

  5. Assemble burger

    Add your mayonnaise, fish, cheese, avocado and cucumber to your brioche bun and enjoy. You can add salt to the barramundi fillets to season (salt is not recommended for babies or toddlers).
