Cheesy broccoli waffles

These waffles are beautifully light and fluffy with a delicious, crispy cheese edges. It’s just another clever way to get veggies into your baby or toddler in a fun and interesting way.

They make for a great afternoon snack and are satisfying, filling and healthy with fresh green broccoli in the mix.

The ingredients below makes 7 mini waffles. I got my mini waffle iron from Kmart for $15, bargain!

Cheesy broccoli waffles

With crispy, cheesy edges and a light fluffy batter, this healthy take on your standard savoury waffle are going to be a big hit in your household. They're baby and toddler friendly and use basic ingredients you may already have in your pantry. With fresh green broccoli stirred through the batter, they're a fun and interesting way to get veggies into your little one.

  1. Mix all wet ingredients together

    Mix together milk, eggs and butter.

  2. Mix dry ingredients and add

    Mix together flour and baking powder in a separate bowl then add to wet ingredients

  3. Use scissors to add broccoli

    Using scissors, add your broccoli to the bowl, snipping off the green parts only (keep the stems and white/green parts of the florets for a soup or to roast with other vegetables).

  4. Stir to create batter

    Stir the mixture well

  5. Cook waffles

    Turn your waffle iron on and let it heat up. Spray with olive oil spray. Spread a thin amount of mixture on the iron (you don't even need to coat the base completely). Top with a small sprinkle of mozarella and a slice of cheese, then spread a thin layer of waffle mixture on top of that. Close and cook until golden brown, about three minutes. Serve warm and store in the fridge or freezer.
