Caulfilower nuggets

These cauliflower nuggets are so simple to make, and have a beautiful cheesy flavour. They’re a great way to get veggies into your toddler, and are great on their own on served with tomato sauce for added incentive.

With just four simple ingredients, they’re also budget friendly and perfect for beginner chefs. They freeze well, and can be reheated in your microwave or air fryer. Make in batches for the week ahead, or freeze for another occasion. These caulfilower nuggets are a great starter food, suitable for babies, toddlers and children 6 months and older. They’re also macro friendly and great to meal prep.

  1. Preheat oven to 180C

Preheat your oven to 180C fan-forced.

  2. Steam and mash cauliflower

Steam cauliflower (I use a basket steamer) and mash with a potato masher.

  3. Add eggs, cheese and breadcrumbs to cauliflower mash

Add all remaining ingredients to your mashed cauliflower. If your mixture is too wet to shape, add in a little more breadcrumbs.

  4. Mould into nugget shapes

Mould your nuggets and place on a lined baing tray.

  5. Bake for 20 minutes or until lightly golden brown

Bake for around 20 minutes, or until lightly golden brown. These freeze well (for up to 3 months) or you can leave them in the fridge for up to 4 days.

Nuggets are best enjoyed warm. You can reheat in the microwave. From frozen, you can pop them into the fridge overnight and microwave the next day, or leave them on the benchtop in a bowl for a few hours, and then microwave.
