Cheats pot pie (20 minute meal!)

This cheats pop pie is everything you want it to be – warm, creamy, comforting, hearty and aromatic.

By making your filling and topping with perfectly puffed pastry, this classic dish can be made in 20 minutes.

It makes for the perfect week night dinner in a pinch, and is also budget friendly with only a few key ingredients.

The trick to reducing your cooking time is cutting your pumpkin and chicken into smaller cubes (about 1.5cm squares). I used fresh thyme in this recipe for a delicious, aromatic flavour you just can’t beat!

Creamy, comforting and aromatic, this cheats pot pie is on the table in 20 minutes making it the perfect weeknight meal. The pumpkin works beautifully with the chicken, cream and cheese, and the fresh thyme gives it a gorgeous flavour that will remind you of your grandmas cooking.

  1. Peheat oven

    Preheat oven to 220C, fan-forced. Preheat time is not included in cooking time.

  2. Prepare your pastry

    Brush your slightly defrosted pastry with olive oil, cut into four squares, place on a baking sheet and bake for 15-20 minutes at 200C.

  3. Prepare vegetables (pumpkin, onion and also your thyme)

    The trick to a quick cook is cutting your veggies a little smaller than you usually would. I cut my pumpkin into 1cm, to 1.5cm cubes. The diced onion, cut pumpkin, and fresh thyme can all go in the same bowl. Make sure you remove your thyme from the stem.

  4. Prepare your chicken

    Cut your chicken into 1.5cm cubes.

  5. Begin cooking chicken

    Add a little olive oil to a pan over medium-high heat (a deep pan, with a lid), and cook for 5 minutes.

  6. Add vegetables

    Add your vegetables and cook for 5 minutes, or until onion is softened. Add your garlic at the end and saute for 1 minute.

  7. Add flour

    Add your flour and stir well.

  8. Add stock and simmer

    Add your chicken stock, give it a good stir, pop the lid on, and simmer for 5 minutes.

  9. Stir and remove lid

    Stir your pie mixture and take off your lid. Cook for a further 5 minutes or until thickened to your liking.

  10. Stir through cream

    Stir through your cream. Your sauce should be fairly reduced. If not, cook your sauce for 5 more minutes with your lid off, until thickened to your liking

  11. Take out pastry

    Remove your pastry from the oven - it should be golden brown.

  12. Serve

    Spoon pie filling onto a slate and top with your pastry.
