Step by Step

  1. Step one: Prepare blender ingredients

    Preheat oven to 180C fan forced.
    Add all blender ingredients in a blender (I used a NutriBullet) and blend until completely combined.

  2. Step two: Add blender ingredients to dry ingredients

    Add all dry ingredients to a large bowl and pour in blender mixture. Mix with a spoon until just combined.

  3. Step three: Add to patty pans and bake

    Line a muffin tin with patty pans and spray with olive oil. This will prevent the muffins from sticking. Bake at 180C for 15 minutes. Allow to cool slightly before serving. Keep in the fridge for up to 3 days, and in the freezer for 3 months. This recipe freezes well.
