Hidden Veggie Bolognese

With finely diced onion and celery, and grated carrot and zucchini, this dish is just as healthy as it is hearty. But don’t let the veggies fool you! It’s still rich, wholesome and will have everyone in the family going back for seconds. You honestly cannot taste the veggies, I promise! Packed with hidden veggies, this saucy, melt in your mouth tender Bolognese is rich, juicy and packed full of nutrients. Served with your favourite pasta, I am so sure it will make your regular rotation.

  1. Step one: Prepare veggies and bacon
    Cut your celery and onion very fine. Add to a bowl with sliced bacon. Grate carrot and zucchini and place in a separate bowl.
  2. Step two: Fry off onion, bacon and celery
    Fry onion, bacon and celery in a good splash of olive oil until onion is translucent and just starting to brown.
  3. Step three: Cook mince
    Add mince to the same pot and break apart with a wooden spoon. Cook until browned.
  4. Step four: Add tomato paste and liquids
    Stir through tomato pasta and add your liquids – beef stock and milk (I know, I know, but trust me).
  5. Step five: Simmer/reduce
    Reduce your sauce until you reach your desired consistency. I like mine less saucy. It takes 45 minutes to an hour for me (but you do you!).
  6. Step six: Serve
    Serve honey mustard chicken with rice and your choice of veggies. We usually use broccoli. Add salt and pepper for adults.
