Kid friendly curry paste

This kid friendly curry paste is mild enough for little mouths without compromising on flavour. With a cashewnut base, a few simple spices and fresh coriander, it’s light, aromatic and adds a great depth of flavour to your curries without the heat. Simply add all ingredients to a food processor, use 2-3 tbsp in your curry, then freeze the rest for later use. I used some of mine in a coconut chicken curry that coming out this week.

  1. Add all ingredients to your blender
  2. Blend for 30 seconds on high, scrape down sides, and blend for another 30 seconds on high.
  3. Place any unused curry paste in an ice cube tray, freeze, then pop out and add to a freezer bag. You'll need 2-3 cubes/2-3 tbsp per curry (depending on size).
