Oat choc chia cookies (freezer friendly)

Welcome back to my Freezer Friendly Lunchbox Series, Episode 2: Oat choc chia cookies.

Our second installment brings us these delicious, freezer-friendly cookies packed with the good stuff like oats, seeds and sultanas (with a drizzle of dark chocolate, for good measure). They’re the perfect ‘treat’ for your child’s lunchbox with a few added health benefits.

This recipe makes about 20 cookies that store well in the freezer for 3 months. I actually quite like eating them straight from the freezer, but they will defrost in your little one’s lunchbox if you pop them in first thing in the morning, or last thing at night.

Oat choc chia cookies (freezer friendly)

These gorgeous oat choc chia biscuits are a healthy treat your kids will love. Packed with the good stuff, like seeds, sultanas and oats (and a drizzle of dark chocolate for good measure), they're the perfect lunchbox snack. They also freeze really well for up to 3 months, making them the perfect meal prep/lunchbox prep recipe. They're the ultimate toddler/kid cookie!

Prep Time 10 mins Cook Time 13 mins Rest Time 15 mins Total Time 38 mins Difficulty: Beginner Cooking Temp: 180  °C Servings: 20

  1. Preheat oven

    Preheat oven to 180C (fan-forced)

  2. Prepare chia seeds

    Mix chia seeds and 1/4 cup water and set aside for 15 minutes.

  3. Combine all ingredients

    Once chia is ready, add all remaining ingredients to a large bowl (besides extra melted dark chocolate) and mix until well combined.

  4. Prepare cookies

    Roll into balls and place on a lined baking tray. Flatten slightly with a fork.

  5. Bake

    Bake for 13 minutes at 180C fan-forced. The edges should be starting to brown.

  6. Drizzle with hot chocolate

    Allow to cool completely before drizzling with melted chocolate. Freezer friendly for up to 3 months.
