Satay chicken (20 minute, toddler friendly dish!)

This super speedy satay chicken is super easy to make!

The sauce is creamy, aromatic and will be loved by your children (and you!). My toddler absolutely loves this dish, and affectionately calls it ‘peanut butter chicken’.

With a simple yet delish sauce, and a little coconnut cream, this dish comes together really quickly and is the perfect family dish.

It’s even suitable for babies 6 months +. Just cut your chicken into strips for baby to hold. You can serve with plain rice and cucumber, or rice with your satay sauce on top.

This speedy satay chicken dish is sure to satisfy your whole family, from bub and toddler to mum and dad. It's rich, creamy and best of all, comes together in less than 20 minutes, making it the perfect family meal. My toddler loves this dish, affectionately naming it 'peanut butter chicken'. It has a gorgeous flavour profile with staple pantry ingredients - I am almost certain this will be added it your weekly rotation.

  1. Start cooking your rice

    Prepare your rice (to cook while you're preparing your satay sauce). I use a rice cooker.

  2. Make your satay sauce

    In a bowl, combine soy sauce, peanut butter, curry powder, Worcestershire sauce, maple syrup and water. Set aside.

  3. Prepare your vegetables and chicken

    Slice your onion and capsicum, and cut your chicken into strips (or cubes, depending on the age of the baby or toddler you are preparing your dish for). See Solid Starts for information on how to prepare your chicken in an age appropriate way.

  4. Pan fry vegetables

    Start by pan frying your onion over medium heat in a little olive oil (3 minutes) then add capisum (2 minutes). Remove from the pan and set aside.

  5. Pan fry chicken

    Breifly pan fry chicken - just until the colour starts to change. It will continue cooking in your sauce.

  6. Add coconut cream, satay sauce and vegetables

    Add your coconut cream (1 cup), satay sauce and vegetables back to the pan. Cook chicken through - sauce should slightly thicken.

  7. Serve

    Serve with rice and cucumber. Enjoy!
